Potato farming in eastern Idaho. Extensive irrigation is required for farming in Idaho, so the rivers determine where farming is possible. In eastern Idaho, the primary river providing irrigation is the Snake River and its tributaries. Southeastern Idaho is home to the single largest potato-producing region in the United States. Over 30% of all United States potatoes originate from here. For Idaho, the crop is a boon to their economy in that it makes up approximately 15% of the gross state sales. The root of the potato is an important food, but the leaves of the potato plant are toxic.
